Buddha Bowl

A Buddha Bowl is a quick and easy meal – packed with so much healthy, vegan deliciousness.  This dressing is oil free.  Make it your own by adding other toppings like roasted cauliflower, sweet potato, kale, edamame, and any other fresh vegetables that you enjoy.

Ingredients

  • 2 cups cooked quinoa

  • 1 package extra-firm tofu, cut into 1-inch cubes

  • 2 tablespoons reduced-sodium soy sauce

  • 1 teaspoon chili powder

  • 1 15-ounce can chickpeas, rinsed

  • 1 ripe avocado

  • 4 tablespoons hot tap water

  • 2 tablespoons tahini

  • 1 tablespoon lemon juice

  • 1 garlic clove, minced

  • 1 teaspoon za’atar spice

Directions

  1. Preheat oven to 450°F
  2. Toss tofu in soy sauce and chili powder in a medium bowl.   Transfer to a baking sheet lined with parchment paper.  Roast, stirring once, until tender, 15 to 18 minutes.
  3. To make the dressing, whisk the hot water, tahini, lemon juice, garlic and za’atar in a small bowl.
  4. Place the quinoa at the bottom of a bowl.  Top with tofu, chickpeas and avocado.  Drizzle with the dressing and enjoy!
